What to eat in April
Spring seems to be getting into full stride. It’s warmer and the days are longer. The countryside has exploded with lush green leaves on the trees, cherry blossom and the fields near me are filled with bright yellow oilseed rape. Despite this, it’s a lean time for nature’s store cupboard, telling us that we don’t need to eat as much as we have been during the cold winter months. The warmer weather and longer days have motivated me to don my running shoes and get back outside to run to shed a few of the extra centimetres I gained over the winter. Being Irish I’m especially looking forward to celebrating spring with new potatoes - perfect!
